A cozy, nourishing, gluten-free and dairy-free dinner the whole family will love.

There’s just something about a big pot of homemade soup simmering on the stove that makes the entire house feel a little cozier. And if you have kids, you know how much of a win it is when you can make one meal that everyone can enjoy!


This homemade Albóndigas Soup has quickly become one of those recipes I love keeping in our dinner rotation, especially during the cooler months.


If you’ve never made albóndigas before, it’s a traditional Mexican meatball soup made with a flavorful broth, vegetables, and tender meatballs. My version uses fresh cilantro and jasmine rice mixed directly into the meatballs, giving them the best flavor and texture.

We’re talking tender beef meatballs, carrots, zucchini, potatoes, garlic, fresh cilantro, and a rich tomato-based broth. Simple ingredients, plenty of protein, and absolutely no need for gluten or dairy.


And the best part? Everything cooks together in one pot!

Homemade Albóndigas Soup Recipe

Ingredients

For the Cilantro & Jasmine Rice Meatballs

* 1½ lbs ground beef (85/15 works beautifully)

* ½ cup uncooked jasmine rice, rinsed

* 1 egg

* ½ cup fresh cilantro, finely chopped

* ¼ cup white onion, finely diced

* 3 garlic cloves, minced

* 1 teaspoon ground cumin

* 1 teaspoon dried oregano

* 1 teaspoon sea salt

* ½ teaspoon black pepper

For the Soup

* 1 tablespoon avocado oil or olive oil

* 1 medium white onion, diced

* 3 garlic cloves, minced

* 3 medium carrots, sliced

* 2 medium Yukon Gold potatoes, cubed

* 2 medium zucchini, chopped

* 1 can (14.5 oz) fire-roasted diced tomatoes

* 1 can (8 oz) tomato sauce

* 8 cups beef broth or chicken broth

* 1 teaspoon ground cumin

* 1 teaspoon dried oregano

* 1 bay leaf

* ½ teaspoon sea salt, plus more to taste

* ½ cup fresh cilantro, chopped

* Juice of 1 lime


Instructions


Step 1: Prepare the Meatballs

In a large mixing bowl, combine the ground beef, uncooked jasmine rice, egg, fresh cilantro, onion, garlic, cumin, oregano, salt, and pepper.


Mix gently with your hands until everything is evenly incorporated.


Roll into small meatballs, approximately 1 to 1½ inches in diameter.


Mama Tip: Don’t overmix the meat! Keeping the mixture light helps create tender meatballs instead of dense ones.


Step 2: Build Your Soup Base

Heat the avocado oil in a large Dutch oven or soup pot over medium heat.


Add the diced onion and sauté for approximately 3–4 minutes, until softened.


Add the minced garlic and cook for another 30 seconds, stirring frequently.


Next, add the carrots, potatoes, fire-roasted tomatoes, tomato sauce, broth, cumin, oregano, bay leaf, and sea salt. Stir everything together and bring to a gentle boil.


Step 3: Add the Meatballs


Carefully drop the uncooked meatballs into the simmering broth, one at a time.

Reduce the heat to maintain a gentle simmer, cover the pot, and cook for approximately 20 minutes.


Try not to stir the soup during the first 10 minutes. This helps the meatballs maintain their shape while cooking.


Step 4: Add the Zucchini


After 20 minutes, add the chopped zucchini.

Continue simmering for another 10–15 minutes, or until the vegetables are tender, the jasmine rice inside the meatballs is fully cooked, and the meatballs reach an internal temperature of 160°F. The jasmine rice absorbs the seasoned broth as it cooks, making the meatballs extra flavorful.


Step 5: Finish with Fresh Cilantro & Lime

Remove the bay leaf.


Stir in the fresh cilantro and squeeze in the juice of one lime.


Taste the broth and adjust the seasoning as needed. Ladle into bowls and serve warm!


A Few Ways to Make It Your Own


One thing I love about homemade soup is how easy it is to adjust depending on what you already have in your kitchen.

Want a little more flavor? Add a pinch of smoked paprika or chili powder to the broth.

Need more vegetables? Toss in a handful of fresh spinach during the final two minutes of cooking.


Cooking for little ones? Keep the seasonings mild and serve with sliced avocado on the side.


Love fresh herbs? Try adding a few finely chopped mint leaves to the meatball mixture. Mint is a traditional addition to many albóndigas recipes and gives the soup another layer of flavor.


Why I Use Jasmine Rice in My Meatballs

Most traditional albóndigas recipes call for white rice, and jasmine rice is one of my favorite options.


You don’t even need to cook it beforehand!

Simply rinse the uncooked rice and mix it directly into the ground beef. As the meatballs simmer, the rice gradually cooks and absorbs all those wonderful flavors from the broth.


The result is a tender, satisfying meatball without breadcrumbs or flour.

Just make sure your meatballs are small enough to cook evenly and allow enough time for the rice to become completely tender.


Storage & Meal Prep Tips


This soup is wonderful for making ahead, especially during busy homeschool weeks when having lunch or dinner already prepared makes the day feel a little easier.

Refrigerator: Store leftovers in an airtight container for up to 3–4 days.


Freezer: Freeze cooled soup in freezer-safe containers for up to 3 months.

Reheating: Warm gently on the stovetop until heated through.


One thing to remember: the rice inside the meatballs will continue absorbing some of the broth as the soup sits.


I like to keep extra broth on hand so I can add a splash or two when reheating.

Simple, Homemade Food Doesn’t Have to Be Complicated


One of the biggest things I’ve learned throughout my clean-living journey is that creating a healthier home doesn’t mean every meal needs to be complicated, expensive, or made with a dozen specialty ingredients.

Sometimes it’s as simple as going back to the basics.
